1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
5. Gradually add the flour mixture to the butter mixture, alternating with milk, beginning and ending with flour. Mix until just combined.
6. Fold in the pink dragon fruit puree and vegetable oil until evenly distributed.
7. Divide the batter evenly among the prepared cake pans and smooth the tops.
8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
9. For the frosting: In a large bowl, beat the butter until creamy. Gradually add powdered sugar, mixing on low speed until combined.
10. Add heavy cream, pink dragon fruit puree, and vanilla extract. Beat on high speed until light and fluffy.
11. Frost the cooled cakes, layering as you go. Decorate as desired.
