Broccoli Cheddar Soup

A creamy and comforting classic

This hearty broccoli cheddar soup is a perfect comfort food for any season. The creamy texture, combined with the savory flavors of broccoli, cheese, and onions, makes it a satisfying and delicious meal.

Ingredients:

  • 1 large head of broccoli, chopped into florets
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Make a roux: Stir in the flour and cook for 1 minute, stirring constantly.
  3. Add the broth and milk: Gradually whisk in the chicken broth and milk until smooth.
  4. Simmer and add broccoli: Bring the soup to a boil, then reduce heat and simmer for 5-7 minutes, or until the broccoli is tender.
  5. Stir in cheese: Add the shredded cheddar cheese and stir until melted and combined.  
  6. Season and serve: Season with salt and pepper to taste. Serve hot with crusty bread.

Tips:

  • For a thicker soup, add more flour to the roux.
  • To make it vegetarian, use vegetable broth and omit the chicken.
  • You can add other vegetables to this soup, such as carrots or potatoes.
  • For a spicier soup, add a pinch of red pepper flakes.
