Ingredients
- 1 cup almonds (or nut of choice)
- 1 cup oats
- 1/4 cup cocoa powder
- 40g (1/4 cup) vegan protein powder
- 2 cups dates, pitted & soaked (reserve water)
- 2 tablespoons date water (adjust depending on how absorbent your protein powder is)
- Optional: 1-2 tablespoons melted coconut oil, drizzle of liquid sweetener (e.g., maple syrup)
- 30g dairy-free chocolate, chopped
Choc Coating:
- 100g dairy-free chocolate
- Optional: nuts or dried fruit for decoration
Method
1. Blitz the Base:
In a food processor, blitz the almonds and oats until the mixture resembles a fine flour. This creates a sturdy base for your protein balls.
2. Combine Dry Ingredients:
Add in the cocoa powder and protein powder, processing briefly to combine everything evenly.
3. Add Dates and Moisture:
Incorporate the soaked dates and reserved date water, along with the optional melted coconut oil if you desire extra richness. Process until the mixture clumps together; if it seems too dry, add more liquid as needed. Finally, toss in the chopped dairy-free chocolate and pulse a bit more until evenly mixed.
