Transform Leftover Tomatoes into Flavorful Tomato Powder

Have leftover tomatoes that are starting to get soft? Instead of throwing them away, turn them into a versatile and flavorful ingredient: tomato powder! This homemade condiment can add a burst of tomato flavor to your dishes, from sauces and soups to marinades and rubs.

Ingredients:

  • Ripe, overripe, or slightly damaged tomatoes
  • Food processor or blender
  • Dehydrator or oven

Instructions:

  1. Prepare the tomatoes: Wash and chop the tomatoes into smaller pieces. Remove any bad spots or stems.
  2. Dehydrate:
    • Using a dehydrator: Spread the chopped tomatoes on the dehydrator trays. Set the temperature to around 135°F (57°C) and dehydrate until the tomatoes are completely dry and crispy. This can take several hours.
    • Using an oven: Preheat your oven to the lowest setting (around 170°F/77°C). Spread the chopped tomatoes on a baking sheet lined with parchment paper. Leave the oven door slightly ajar and dehydrate until the tomatoes are completely dry and crispy. This can take several hours.
  3. Grind into powder: Once the tomatoes are completely dry, transfer them to a food processor or blender. Pulse until you have a fine powder.
  4. Store: Store the tomato powder in an airtight container in a cool, dark place. It will keep for several months.
