Have leftover tomatoes that are starting to get soft? Instead of throwing them away, turn them into a versatile and flavorful ingredient: tomato powder! This homemade condiment can add a burst of tomato flavor to your dishes, from sauces and soups to marinades and rubs.
Ingredients:
- Ripe, overripe, or slightly damaged tomatoes
- Food processor or blender
- Dehydrator or oven
Instructions:
- Prepare the tomatoes: Wash and chop the tomatoes into smaller pieces. Remove any bad spots or stems.
- Dehydrate:
- Using a dehydrator: Spread the chopped tomatoes on the dehydrator trays. Set the temperature to around 135°F (57°C) and dehydrate until the tomatoes are completely dry and crispy. This can take several hours.
- Using an oven: Preheat your oven to the lowest setting (around 170°F/77°C). Spread the chopped tomatoes on a baking sheet lined with parchment paper. Leave the oven door slightly ajar and dehydrate until the tomatoes are completely dry and crispy. This can take several hours.
- Grind into powder: Once the tomatoes are completely dry, transfer them to a food processor or blender. Pulse until you have a fine powder.
- Store: Store the tomato powder in an airtight container in a cool, dark place. It will keep for several months.
