Depression-Era Chocolate Cake, Also Known as “Crazy Cake”

Preparation:

  1. Preheat your oven to 375º F and lightly grease two 9-inch cake pans with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt. Add the water, vegetable oil, apple cider vinegar, coffee (if using), and vanilla extract. Stir until the mixture is smooth and free of lumps.
  3. Pour the batter evenly into the prepared pans. Bake for 24-26 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  4. While the cakes are baking, prepare the frosting. In a large bowl or mixer, whisk together the powdered sugar, cocoa powder, and salt (if using). Add the water, softened butter, and vanilla extract, and beat until smooth and creamy. Adjust the consistency by adding more powdered sugar for a thicker frosting or more water for a thinner one.
  5. Let the cakes cool completely before frosting. Enjoy your delicious “Crazy Cake”!
