Instructions:

  2. Stir in red curry paste and cook for 30 seconds, until fragrant.
  3. Pour in coconut milk and bring to a simmer.
  4. Add chickpeas and mixed vegetables. Simmer for 10-15 minutes, or until vegetables are tender.
  5. Season with lime juice, salt, and pepper.
  6. Garnish with fresh coriander.
