Garlic Herb Roasted Vegetables

This classic combination of roasted vegetables is a simple yet flavorful side dish.

Ingredients:

  • 4 cups potatoes, diced
  • 2 cups carrots, sliced
  • 2 cups zucchini, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Combine vegetables, olive oil, garlic, herbs, salt, and pepper in a bowl.
  3. Spread on a baking sheet.
  4. Roast for 30-40 minutes, or until tender and golden brown.

Optional: Drizzle with balsamic glaze or lemon juice.
