Chickpea Stew

Instructions:

  1. Heat olive oil in a pot. Sauté onion and garlic until softened.
  2. Stir in cumin, coriander, and cayenne pepper. Cook for 30 seconds.
  3. Add bell pepper and cook until tender.
  4. Stir in chickpeas, crushed tomatoes, vegetable broth, oregano, and thyme. Bring to a boil, then simmer for 20-25 minutes.
  5. Season with salt and pepper.
  6. Serve hot, garnished with cilantro.

Optional:

  • Add tahini or coconut milk for creaminess.
  • Serve with brown rice or quinoa.
  • Top with vegan yogurt or sour cream.
