Chickpea Stew

This hearty and flavorful stew is a perfect vegan comfort food. Packed with protein and fiber, it’s a satisfying and nutritious meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • ¼ teaspoon cayenne pepper (optional)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
