Instructions
1. Make the Meatballs:
- In a large bowl, combine ground chicken, breadcrumbs, grated carrot, green onions, garlic, ginger, soy sauce, fish sauce (if using), lime juice, sesame oil, red pepper flakes, salt, and pepper.
- Mix until well combined. Don’t overmix, or the meatballs may become tough.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Form the mixture into meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
2. Make the Peanut Sauce:
- In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey (or brown sugar), sesame oil, garlic, ginger, and water until smooth. Adjust the amount of water to achieve your desired sauce consistency.
- Taste and add red pepper flakes if you like it spicy.
3. Serve:
- Once the meatballs are cooked, drizzle them with peanut sauce or serve the sauce on the side for dipping.
- Garnish with chopped fresh cilantro, if desired.
- Serve with rice, noodles, or a fresh salad.
