Vegan Coconut Miso Chickpea Soup

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and ginger until softened.
  2. Add chickpeas, vegetable broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In a small bowl, whisk together miso paste with a ladleful of hot soup. Gradually stir into the pot.
  4. Season with red pepper flakes, salt, and pepper to taste. Serve hot, garnished with cilantro (optional).
