Hearty and Healing Vegetable Soup

Instructions:

  1. Sauté the Aromatics: In a large pot, sauté the onion, leeks, celery, carrot, red pepper, and zucchini in olive oil until softened. Add the garlic and chili pepper (if using) and cook for another minute.
