Crock Pot Foil-Wrapped Potatoes

Instructions:

  1. Prepare the Potatoes:
    • Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
    • Cut the potatoes into evenly sized chunks if you prefer them cooked faster, or keep them whole for a more rustic result.
  2. Season the Potatoes:
    • In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, dried rosemary or thyme (if using), salt, and pepper. Ensure the potatoes are evenly coated.
  3. Wrap the Potatoes:
    • Tear off enough aluminum foil to create individual packets for each potato or a large packet for all.
    • Wrap each potato or the potato chunks securely in aluminum foil, making sure they are well-sealed to retain moisture.
  4. Prepare the Crock Pot:
    • Place the foil-wrapped potatoes in the bottom of the crock pot. You can stack them if needed, but ensure there’s some space for the heat to circulate.
  5. Cook:
    • Cover the crock pot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. The cooking time may vary depending on the size of the potatoes and your specific crock pot.
  6. Check for Doneness:
    • After the cooking time, carefully open a foil packet (be cautious of steam) and check if the potatoes are tender. You can test doneness by inserting a fork or knife into the potato—it should go in easily.
  7. Serve:
    • Once the potatoes are cooked to your liking, remove them from the foil packets. Serve as a side dish or top with your favorite toppings like sour cream, cheese, chives, or bacon bits.
