Apple and Mascarpone Fondant: A Decadent Delight

Instructions:

  1. Prepare the apple filling: Peel, core, and slice the apples into thin wedges. In a skillet, combine the apples, brown sugar, lemon juice, and cinnamon. Cook over medium heat until the apples are softened and the juices have thickened. Set aside to cool.
  2. Make the mascarpone cream: In a bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Prepare the cake base: Preheat your oven to 180°C (350°F). In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  5. Assemble the fondant: Pour the cake batter into a greased and floured baking dish. Top evenly with the apple filling and dollops of mascarpone cream.
  6. Bake: Bake in the preheated oven for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Serve: Let the fondant cool slightly before serving warm with a scoop of vanilla ice cream, if desired.

Tips:

  • For a richer flavor, add a tablespoon of almond extract to the mascarpone cream.
  • To make the fondant even more indulgent, drizzle it with caramel sauce before serving.
  • Serve with a dollop of whipped cream for a classic dessert presentation.
