In a saucepan, we place 2 eggs and sugar and beat until the sugar is completely dissolved.
We add cornstarch and continue beating with a hand mixer.
Next, we add milk and grated lemon zest and continue beating.
We bring it to a boil, continuing to beat until it thickens, then transfer the mixture to a large container. We cover it with plastic wrap and refrigerate to cool.
In another bowl, we add whipping cream and beat with an electric mixer. We gradually add the refrigerated mixture while continuing to beat.
Once everything is well combined, gently fold with a spatula in circular motions and set aside.
In a large dish, we cover the entire surface with the cream mixture. Then, we dip the cookies in milk and place them side by side to form a layer on top of the cream layer.
Next, we add another layer of cream on top, followed by another layer of cookies, and repeat until all ingredients are used.
Then, smooth the top with a spatula, cover it with plastic wrap, and refrigerate for 2 to 3 hours.
After this time, remove the plastic wrap and sprinkle crushed biscuits on top.
Additional Tips:
For crispy bases and layers, use crushed cookies or cereals mixed with a bit of honey or syrup to hold them together.
Garnish with fresh fruits, citrus zest, or herbs like mint for a visually appealing finish.
