Cajun Pasta Be Poppin’: A One-Pot Explosion of Flavor

But Wait, There’s More! (The flavorful supporting cast)

  • 6 Tbsp. Butter, divided
  • 3 Tbsp. Cajun seasoning, divided
  • 1 tsp Ground thyme
  • 1 Onion, chopped
  • 1 Bell pepper (color of your choice), chopped
  • 1 lb. Linguine or your favorite pasta
  • ⅓ Cup Reserved pasta cooking liquid
  • 1 Cup Heavy whipping cream
  • 1 Can (14.5 oz) Diced tomatoes, undrained
  • 2 tsp Minced garlic
  • Salt and pepper to taste

Instructions:

  1. Spice Up Your Life: Melt 3 tablespoons of butter in a large pot or Dutch oven over medium heat. Add the chicken pieces and sprinkle with half of the Cajun seasoning and thyme. Cook until the chicken is golden brown and cooked through. Remove the chicken from the pot and set aside.
  2. Sausage Sizzle: Add the sliced andouille sausage to the pot with the remaining butter. Cook until the sausage is browned and releases its delicious flavors.
  3. Veggie Fiesta: Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes. Season with salt and pepper.
  4. Pasta Party: Pour the uncooked pasta and reserved pasta cooking liquid into the pot. Stir to coat the pasta and bring to a boil. Reduce heat and simmer according to package instructions, or until the pasta is al dente (cooked but still firm to the bite).
  5. The Creamy Climax: Once the pasta is cooked, stir in the heavy whipping cream, diced tomatoes, minced garlic, and remaining Cajun seasoning. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld.
  6. The Grand Finale: Add the cooked chicken and shrimp back to the pot and toss to coat them in the creamy sauce. Heat through for a couple of minutes, until the shrimp are pink and opaque.
  7. Serve and Savor: Dish up your Cajun Pasta Be Poppin’ and prepare to be amazed! Garnish with chopped fresh parsley or green onions for an extra pop of color and freshness.

Tips for Success:

  • Don’t Overcook the Shrimp: Shrimp cooks quickly. Add them towards the end to prevent them from becoming rubbery.
  • Spice it Up (or Down): If you prefer a milder dish, start with less Cajun seasoning and adjust as desired. For a real kick, add a pinch of cayenne pepper.
  • Protein Power: Feel free to substitute other proteins like boneless, skinless chicken thighs or sliced steak for the chicken breast. Adjust cooking times accordingly.

Cajun Pasta Be Poppin’ is a guaranteed crowd-pleaser, perfect for a casual weeknight dinner or a potluck gathering. So, crank up the tunes, gather your loved ones, and get ready to experience a flavor explosion that will leave you saying, “OMG, don’t lose this recipe!”
