Hey everyone, I whipped up this sauce recently and let me tell you – it’s insanely good. I know the combination might sound a little strange at first (mango, avocado, garlic?), but trust me, it works! This sauce is bursting with flavor and perfect for tossing with your favorite pasta or veggie noodles.
Here’s what you’ll need:
- 3 ripe mangoes, peeled and diced
- 3-4 large garlic cloves, minced (don’t be shy, garlic lovers!)
- 1 jalapeño, seeded and finely chopped (adjust the amount for your spice preference)
- Green onions, chopped (around 5 should do the trick)
- 2 ripe avocados, cubed
- Handful of fresh parsley, chopped
- Cooked veggie pasta of your choice (I used zucchini noodles for a lighter option, but regular pasta works too!)
