Horseradish Leaves: The Winter Seasoning You Never Knew You Needed (and Can Make in Bulk!)

The Beauty of Bulk:

Unlike the fiery root, horseradish leaves are surprisingly versatile. You can use them fresh, chopped, or even turn them into a shelf-stable seasoning to last the whole winter. Here’s the best part: you can make enough to fill 20 jars (or more!), ensuring a constant supply of this flavorful gem.

Making Horseradish Leaf Seasoning:

Here’s what you’ll need:

  • Fresh horseradish leaves (wash and dry thoroughly)
  • Salt
  • Olive oil (optional)
  • Dehydrator (or oven)
  • Food processor or blender
  • Airtight jars

The Process:

  1. Dehydrate: The key to creating a shelf-stable seasoning is removing the moisture from the leaves. You can use a dehydrator set to its lowest setting (around 100°F or 38°C) or your oven on its lowest setting with the door slightly ajar. Dehydrate the leaves until they become brittle.
  2. Grind: Once completely dry, grind the leaves in a food processor or blender until you achieve a fine, almost flour-like consistency.
  3. Season and Store: For extra flavor, you can add a pinch of salt to the ground leaves. If using olive oil, drizzle a tiny amount (just enough to moisten, not drench) into the processor while grinding for a slightly richer texture. Store your finished seasoning in sterilized airtight jars in a cool, dark place. It will stay fresh for up to a year!

Unlocking Flavor Potential:

Now comes the fun part – using your homemade horseradish leaf seasoning! Here are some ideas to get you started:

  • Soup and Stew Enhancer: Add a teaspoon or two of the seasoning to your favorite winter soups and stews for a depth of flavor and a subtle kick.
  • Roasted Vegetable Booster: Sprinkle some seasoning on your roasted root vegetables like carrots, parsnips, or potatoes for a delicious flavor twist.
  • Mashed Potato Magic: Liven up your mashed potatoes with a sprinkle of horseradish leaf seasoning for an unexpected yet delightful bite.
  • The All-Purpose Spice: Experiment by adding a pinch of the seasoning to various dishes like scrambled eggs, pasta sauces, or even salad dressings.

With this easy-to-make and versatile seasoning, winter meals will never be bland again. So, the next time you encounter horseradish, don’t throw away the leaves! Embrace their hidden potential and create a flavorful winter wonderland in your kitchen.
